I’m Bonnie and by day I work as a full time, USA Today Best-Selling Author with multiple pen names while homeschooling my 6 beautiful children, as well as running three other companies from my home. (but only add the acid 1 teaspoon at a time and stir for 60 seconds before determining if it needs more. Often, 2 or 3 are enough to separate the whey sufficiently. When you notice this, don't add any more acid. It is ready to be strained in the cheese cloth!) Ingredients 1 gallon whole milk (non ultra posterized) 1/4 tablet rennet 2 tsp citric acid Salt to taste Mix citric acid with 50ml of water, then combine with milk in medium size pot. Heat the milk until 90F and add rennet mixture (1/4 rennet tablet with 50ml of water). Reduce the heat and allow the milk to come to 105F, stirring gently, then remove from heat. Cover and let it rest for 5 min. Drain off the curds completely. Then microwave for 1 min, then remove moisture again and mix to distribute the heat. Microwave for another minute. Knead the cheese until it starts come together and begin stretching it out. Keep cheese hot, microwave few more times. The cheese should become smooth and shiny. Then put cheese into a salted ice cold water for a couple minutes. I didn’t salt the curds, but I kept cheese in salted water overnight. Got great result.
Here we freeze dried 5 pounds of Cottage Cheese. The cottage cheese filled 2 1/2 trays, and the rest of the tray space was filled with diced peaches. The cottage cheese was great! It took a bit longer to reconstitute than we expected since we used cold water. Like usual we couldn't wait and what we tried on camera was still a bit crunchy but yummy. For me, Bruschetta has to be tomato and basil. The basil has to be fresh and the tomatoes ripe, as in this case, semi dried for am intense sweet flavour. The name Bruschetta originated from the meaning of toasting over hot coals. We don't all have hot coals so the griddle pan is the next best thing. Don't go and use a toaster, it simply won't give you the right taste. You need that charred flavour with hints of smokiness. Use the best olive oil you can afford, yes it has to be first pressed virgin. This is a simple dish with few ingredients so it deserves the best! Ingredients - 500g dried elbow pasta - 120g unsalted butter - 70g all-purpose flour - 1L milk - 250g medium sharp cheddar cheese, grated - 250g red Leicester cheese, grated - 225g grated Gruyere cheese, grated - Salt to taste - Black pepper to taste - 2 tbsp English mustard - 60g panko breadcrumbs Method 1. Start by making the cheese sauce. In a med pot over medium-high heat, melt the butter. Once melted, add the flour and whisk. Cook this for 2-3 minutes 2. Slowly add the milk while whisking the whole time. 3. Once you have a smooth sauce, add 3/4 of the grated cheese and melt it into your sauce on medium heat. 4. Once the cheese is melted, season it with salt and pepper and mix in the mustard. 5. Cook the pasta to the packet instructions and once cooked, drain well. 6. Add the cooked and drained pasta back to the pot and pour over the cheese sauce. 7. Mix well and add to an oven-safe dish. 8. Sprinkle a handful of panko breadcrumbs over the top, followed by the remaining grated cheese and then another handful of panko. 9. Bake and 180°c for 30-35 minutes or until golden brown and delicious.
